"The Cake Mix Doctor" is Back!

Anne Byrn, yes, the one and only "Cake Mix Doctor" is back with more recipes guaranteed to impress your family and friends and save you time.

If you work in a law firm, you don't have much time to make cakes - but you love to bake, right?

Here's the answer -- "The Cake Mix Doctor Returns!"

Here's one of my favorite "Cake Mix Doctor" recipes from the original book:

Pumpkin Spice Cake *

Vegetable Oil spray for misting the pan
1 package (18.25 ounces) plain spice cake mix
1 package (3.4 ounces) vanilla instant pudding mix
1 cup pumpkin, canned or mashed fresh
1/2 cup vegetable oil, such as canola, corn, safflower, soybean, or sunflower
1/2 cup water
3 large eggs
1 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/2 cup pecans, walnuts or almonds, toasted

1. Place a rack in the center of the oven and preheat the oven to 350 degrees. Lightly mist a 13 by 9 inch baking pan with vegetable oil spray. Set the pan aside.

2. Place the cake mix, pudding mix, pumpkin, oil, water, eggs, cinnamon and ginger in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat for 2 minutes more. The batter should look thick and well blended. Pour the batter into the prepared pan, smoothing it out with the rubber spatula. Place the pan in the oven.

3. Bake the cake until it springs back when lightly pressed with your finger and a toothpick inserted in the center comes out clean, 32 to 35 minutes. Remove the pan from the oven and place it on a wire rack to cool for 20 minutes. Frost with either of the suggested frostings, if desired*. If frosting, sprinkle with the toasted nuts. Slice into squares and serve.
